How the marker works

Edible markers are verification components produced from edible-grade raw materials that can be safely used in products that come into contact with food. The distinguishing feature of these markers is that all the components used comply with food safety standards; this allows them to be applied without posing any risk in directly consumed products or on surfaces in contact with food. Edible markers do not change the product's taste, smell, color or texture. They are used in trace amounts and are entirely unnoticeable to the consumer. Verification rests on the marker's chemical signature, revealed by a calibrated method; this signature confirms that the product belongs to a specific brand and batch. The greatest value of edible markers is that they can also cover product groups where verification was previously difficult to apply. A substance-level marker is bound to the product itself, unlike visual labels that can easily be imitated. Verification is done repeatably both in the field and in the laboratory.
